ASPIRATIONS:
During his tenure, he has had the opportunity to create a true culinary experience using local St. Lucian produce.Orlando is very interested in the training of young cooking enthusiasts and encourages cooking activities and competitions among schools on the island.
He was invited to judge the First Caribbean Master Chef Competition, which took place in London some years ago, as well as a judge for the Barbados Secondary School’s competition earlier this year. He continues to inspire the up & coming young ones in developing their own recipes using local products. Orlando has one of his recipes listed in Caribbean Destination Cookbook.
Orlando is one of the advocates for the promotion of healthy lifestyles. He is an avid tennis player, and a supporter of the Breast Cancer movement. He takes part in as many activities to support this cause, as time will permit.
ON THE HORIZON:
Orlando is totally committed to the development of his own brand of Caribbean cooking. ‘Share the love Cuisine’, is a cooking style, coupled with a Caribbean cultural experience. He plans to achieve this by using local island products, and organic fruits and vegetables grown by local farmers.
Presentations using colour, fine dining experience and cultural cooking methods, will be his main aim to showcase Caribbean Cuisine on the World Stage. In doing so, he hopes to expose the talents of Caribbean Chefs, and their outstanding capabilities. The development of young and budding potential professionals is also one of his goals. This can assist our people to earn their place among the best in the world.
